Your destination, Piedmont, is one of the most diverse culinary regions in Italy, if not Europe. In general, Piedmontese cuisine is more substantial than in the rest of Italy. Pasta is used less, but when it is, it is made with egg. Rice from Lomellina, Vercellese, and Novarese is often used in risotto dishes with red wine and mushrooms. A specialty is the "Agnolotti," ravioli filled with beef, sausage, cabbage, and/or truffles. Olive oil is also often mixed with butter here, which is a better aroma and flavor carrier. The truffle dishes and Barolo wines are famous and can sometimes cost a small fortune. Veal from the Piedmontese cattle - served with tuna sauce or anchovies and Turin's "Bagnet Ross" - and seasonal game dishes of the highest quality are the trump cards of the main courses. Piedmontese people place great emphasis on quality, natural cultivation methods, and traditional regional ingredients. No wonder Piedmont is the birthplace of the famous "Slow Food" movement (with the snail as its emblem). A famous Piedmontese dish is "Marengo Chicken," which is prepared in numerous variations with mushrooms, tomatoes, truffles, eggs, crayfish, and much more. The "Tapulon," a dish made from chopped donkey meat in red wine, is also classic. The "Finanziera" is a special (delicious) dish for the brave, as the stew consists of cockscombs and various offal. You will find an enormous selection of appetizers, cheese (Castelmagno, Bra, Gorgonzola), and sausage or salami varieties (Mortadella, Salame di Cuneo, Doja). To accompany this, you can drink one of the world-famous wines or make a pilgrimage to the Barolo, Barbaresco, and Nebbiolo winemakers. For dessert, you can try the famous nougat cream, for example. Taste the delicacies of the region and enjoy a delicious Asti while looking out over the hills.
