La cocina palmera – The simple, delicious island cuisine
Traditional food here is determined by local products. For a long time, La Palma was left to its own devices. Typical are potatoes, Gofio (more on that later), rabbit, pork and goat meat, goat cheese, fish, and vegetables and fruit. (The island is known for its banana plantations.) Three ingredients or dishes are omnipresent: Gofio, Mojo, and Papas Arrugadas. Gofio is a flour made from previously roasted cereals or legumes. Gofio is used to prepare both savory and sweet dishes. The famous Mojo sauce comes in green or red varieties. The green color comes from fresh coriander and parsley. The red island-typical Mojo Palmero is milder than it looks. Both sauces are served with Papas Arrugadas. These are small potatoes cooked wrinkly in a little saltwater. Fresh grilled fish or meat goes well with this. Other typical meat dishes are prepared from wild goat and rabbit meat. During rabbit hunting, traditional hunting dogs of the Podenco Canario breed help. Finally, the delicious wine of the Canary Islands should be mentioned. It is believed that missionaries from Mallorca brought the first vines to the Canary Islands in the mid-14th century. Try the characterful, strong white and red wines of La Palma, some of which are grown on volcanic ash.
